Vitamin C is an essential antioxidant for the human body that plays a key role in various biological processes, including enzymatic functions and iron absorption. Due to its widespread use in the food and pharmaceutical industries, numerous analytical methods have been developed for its determination, with spectrophotometric techniques being favored for their practicality, low cost, and speed. Current research highlights a variety of sensitive spectrophotometric methods using different reagents and reaction mechanisms to accurately measure vitamin C levels in products ranging from commercial fruit juices to biological samples.
