Truffle mushrooms (Tuber sp.) are valuable organisms belonging to the Ascomycetes class that spend their entire life cycle underground by forming an ectomycorrhizal symbiotic relationship with the root systems of higher host trees such as oak, hazelnut, linden, hornbeam, pine, and beech. Highlighted for their unique aroma, flavor, and high nutritional value alongside rich protein, mineral, and vitamin content, these mushrooms have been consumed for centuries for both medical and dietary purposes due to their cholesterol-free and low-calorie nature. Out of approximately 180 species known worldwide, only 13 possess commercial value, with the most popular species being the winter black truffle (Tuber melanosporum), white truffle (Tuber magnatum), and summer truffle (Tuber aestivum). Cultivation requires specific conditions including an alkaline pH (7.5–8.5), high calcium content, 10–30% clay ratio, well-aerated and well-drained soil structure containing 8–10% organic matter, as well as an elevation of 620–1200 meters and suitable climate conditions. Yield production takes 5–7 years from the planting of spore-inoculated seedlings, while the harvest of mature truffles is carried out with the help of specially trained dogs thanks to the intense aroma they emit. In Turkey, 48 naturally occurring species have been identified, and through action plans prepared by the General Directorate of Forestry, the establishment of artificial truffle forests, the expansion of scientific studies, the prevention of unconscious harvesting, and the creation of sustainable cultivation awareness through training are targeted.
